During this illustrious 2013 Washington Wine Month a shout-out to Walla Walla Community College, Center for Enology and Viticulture’s College Cellars seems highly appropriate.
This 2011 Cabernet Sauvignon Ice Wine is great! Smooth, but not syrupy, fruity (raisin) rather than tooth-achingly sweet with just a hint of pink; more like a liquor than a wine in presence. The label indicates sugar at harvest to have been 30.5 * Brix with 8.2* Brix of residual sugar… 13.2% ABV.
We picked up this bottle in October when we visited the facilities and spoke with some of the staff. It was harvest time, a fantastic time to observe students and instructors. This will be my new home in September when I begin the certification program.
