Friday, fully three weeks into Washington Wine Month, with a curry dinner at home. We raided one of the cases we have set aside as we needed a pretty big wine to pair with dinner: Seven Hills Winery 2010 Ciel du Cheval, a bold Bordeaux-style red. Have you noticed that most of our wines are from Walla Walla? We spent quite a bit of time there last summer and fall. Seven Hills is still our only membership since we like to purchase as we travel (other places) too.
Knowing this is a long-term cellar wine we opened to bottle in great anticipation; it has only been with us only about four months. Pepper, plums, and a summer’s worth of berries greeted us. So flavorful! The tannins weren’t too harsh, which was my concern.
