I should be studying as I have several exams coming up, but we opened this bottle to experience the dolcetto grape tonight and I wanted to share. Recently the new grape varieties we have been tasting have been very tannic – this wine is wonderfully balanced right from opening. Inviting dark cherry and berry aromas continue on the palate with a balance of acid and tannins, medium body, bright candy-apple red, and 13.5% ABV. It was a simple-dinner night, so we had lots of cheeses and some meats to pair it with – our favorite bread, rye, didn’t do this wine any favors, but the majority of the proteins were fantastic. Dolma were my favorite, a bite and a sip, repeat… ever so nice.
