A racking good time

My summer ‘vacation’ started out well in the winery.  How about yours?

    1. We use a pump to suck liquid wine from the barrel, some of the solids go with it, but not much. Then we turn the barrels over where the remaining liquid and solids come out and we clean as much out as we can with cold water before refilling the barrels with the wine (which we want to keep cold) again to store for a while longer. Thanks for asking!
